Often called escarole (which has widerleaves), this salad plant will succeed in anyordinary garden soil not deficient in humus andnormal moisture. Like lettuce, its succulentgrowth must be rather rapid to enable it toform tender leaves. On poor, dry, exposed soilits growth will be slowed up so that its leaves,if they form in quantity, will be tough andunnecessarily pungent. For success in growing endive, use thesame area where lettuce succeeded early in the spring, and add a thin layer of compoK nrthe rows.
